Proposed Eatery Serves Epicurean, Environmental Health

New Deerfield Restaurant will serve healthy food and keep a sustainable conscience.

A new Deerfield restaurant offering healthy food choices and will be located near the intersection of Deerfield and Saunders Roads is in the preliminary development stages with the Deerfield Plan Commission.

The owners not only plan to serve healthy food, they intend to minimize their environmental impact as well, according to Associate Planner Kathy LeVeque. “They will be composting,” she said. “They want zero waste.”

The owners plan to turn an existing house at 780 Saunders Road into their restaurant. As a result, they have asked the Plan Commission to rezone the property from its current residential use, according to Principle Planner Jeff Ryckaert.

The building contains 3,000 square feet, according to Ryckaert. An outdoor patio will offer more seating when the weather is right.

Once the Plan Commission Acts, the Village Board of Trustees will decide if the new zoning is appropriate. There have been two meetings with the Commission so far to refine details.
